Kwati Soup
Janai Purnima is on the door step, generally it is a festival of Hindu, it is a celebration which observes the bond of purity, in this day Hindu man renews his Janai. We celebrate it along with family get together and feasts and as a ritual we specially make kwati in this day. don’t know the real fact behind it but we are following old sayings as our grandmother used to say us that on this day if we will have Kwati then we may lose our all tiredness of whole year, somewhere it is true cause pulses contains extreme amount of nutrients .literally we do not need to find fact so, let’s learn to make it.
Ingredients:
Kwati pulses - 200 gram
Clarified butter / Butter - 2 tbsp
Bamboo shoot - 50 gram (sliced in small
pieces)
Green chili - 2 (slit)
Red chili powder - 2tsp
Turmeric powder - 1 tsp
Salt - to taste
Tomato - 1 finely chopped
Onion - 1 big size (finely chopped)
Bay leaf - 2
Ginger & garlic paste - 2 tsp
Cumin seeds - 1 tsp
Coriander - 2 tsp
Cumin powder - 2 tsp
Garam mashala - 2 tsp
Coriander leaves - 2 tbsp (Finely chopped)
At first wash the pulses and soak it in a big bowl
over night or around 15 hr then strain the whole water if you like sprouted
pulses you can make kwati by using it, check the note to know how to sprout the
pulses. let the sit cooker on medium flame wait to hot, now here will add
clarified butter and bay leaf then cumin seeds let them fry for few second
afterwards add bamboo shoot fry it till it becomes brown, around 5
minute then add chopped onion and add some salt (as I always used to say in my
all recipe now I will say again that after adding salt all moisture from onion
will evaporate fast so that onion will cook faster) fry until it becomes brown
then add ginger & garlic paste and turmeric powder then stir it for 2 to 3
minute on low medium flame thereafter here will go chopped tomatoes again stir
it for some minute the add all pulses on it and add water (as you need for
curry) next here goes coriander powder, cumin powder, garam mashala powder, red
chilli powder, green chili and salt to taste and stir it once and cover the lid
of cooker and after 3 whistle open the lid stir the whole curry and add
coriander leaves and serve it hot with rice.
Tip: -
Ø Kwati is a mix of 9 different types of
pulse, you can get it packed in every grocery shop as pulses for kwati.
Ø For sprout after soaking pulses for 15hrs,
take clean muslin or cotton clothes placed the whole pulses on it and make a
bundle and keep it to the container and cover the lid of container for whole
night or 8-10 hrs. Make sure in pulses there is no excess water.
Ø If pulses is old then it will take more
whistle to cook so after 3 whistle wait to depressurized the air of cooker,
afterwards check out is it done or not and give 1 or 2 whistle more as
required.
Ø Bamboo shoot is optional you can skip it if
you don’t like to add.
Ø If you do not have clarified butter you can
use normal Amul butter.
